Instructions
First, take your stand mixer and add butter and sugar to it. Mix it on speed 3 for 3 minutes. You can adjust the time and speed accordingly.
Scrap the sides of the mixer with the help of a spatula and add the eggs and vanilla. Beat everything together on speed 3 for another three minutes.
Once everything is mixed together, add flour to the mixer. Now, beat the mixture on speed 4 for 1 minute. Again, scrap the edges and mix everything with a spatula.
Transfer the cupcake batter to the paper cases. Only fill 1/4th of each paper case. Put these cases into the small pudding dishes.
Load these pudding dishes in the air fryer. Cook them for at least 12 minutes at 160 degrees Celsius or 320 degrees Fahrenheit.
Once it is time, check whether they are cooked. Insert a toothpick in each pudding dish and if it comes out clean, the cupcakes are ready. If they come out with a little bit of mixture, cook for another 3 minutes.
Transfer them to the cooling tray and allow them to rest for a little bit.
The next step is making the buttercream. For this, go and clean your standing mixer.
Once done, take small bowls and add food colorings (of different colors) and buttercream in each bowl.
Once the cupcakes are cool, add buttercream to the piping bags. Load the nozzle into the piping bag. You may cut the bottom of the piping bag to let the nozzle come through.
We are almost there. Use your hands and twist the piping bag tightly to make a twist at the top of each cupcake. Finally, serve them on the serving plate and enjoy.
Notes
You can make these air-fried cupcakes ahead of time. For instance, if you have a party the next day, making and storing them in the fridge might be a better idea.
Try using different colors and do not limit your creativity. I love making red, blue, and yellow cupcakes, especially for kids’ parties. You can always customize the buttercream to match the theme of the party.
