Sliced bread with butter and salsa to serve with gammon (optional)
Instructions
First, remove the gammon joint from the refrigerator and let it rest for 30 minutes before cooking it.
In the meantime, preheat the air fryer to 320 degrees Fahrenheit or 170 degrees Celsius for about 3 to 5 minutes.
Once the time is over, loosely wrap the gammon joint in the aluminum foil. Cut two large pieces of foil and place them in a way that makes a cross shape. Place the gammon in the middle of it and wrap it accordingly until the gammon is fully covered.
Transfer it to the air fryer and let it cook for about an hour and ten minutes at 360 degrees Fahrenheit or 170 degrees Celsius. You may need to adjust the cooking time, depending on your specific air fryer model.
Now, use a meat thermometer to check whether the internal temperature reaches 63 degrees Celsius or 145 degrees Fahrenheit. Do check the thick parts of the meat.
It should be easy to pierce with a knife at this point. If it is still not cooked, continue to cook it for a few minutes until it reaches the right temperature.
Once the gammon joint is cooked, it is time to prepare a glaze.
Put all the glaze ingredients in a saucepan and bring it to a simmer. Cook it for a few minutes until you see the mixture reducing to a syrup consistency. Leave it aside to rest.
Remove the gammon joint from the air fryer and peel back the foil. Use the knife to remove the rind of the joint, and you will be left with a thin fat layer.
Use the knife to make a diamond-like pattern in the fat of the gammon joint. Once done, throw a few garlic cloves in the diamond before glazing. It is an optional step.
Lightly brush the joint with the glaze. After this, throw the fat in the air fryer and cook it for another 5 minutes at 200 degrees Celsius or 400 Degrees Fahrenheit.
Repeat the step of brushing the meat with glaze and air frying for a few minutes until you get a crispy top.
Once you are satisfied with the crispiness, remove it from the air fryer and let it rest for 10 minutes on a flat surface.
After this, slice it and serve the gammon joint warm.
Notes
It is best to use a meat thermometer while cooking a gammon joint in the air fryer. Just insert the thermometer in the thickest part of the meat and read the temperature until it reads 145 degrees Fahrenheit. Please note that the temperature will rise when you go for the next round with glaze over the gammon in the air fryer.
The weight of your gammon joint and the efficiency of your specific air fryer model will influence the cooking time. The rule of thumb for gammon joints is that 20 minutes will go per 450g of meat plus 20 minutes of cooking. That said, it is better to use a meat thermometer.
