Instructions
First, take a mixing bowl and combine eggs, butter, vanilla extract, and buttermilk to it. Stir it well to make sure everything is well combined.
Next, sift all the dry ingredients into the bowl, including baking soda, baking powder, salt, sugar, and flour. Gently fold all the ingredients into the bowl in a way that you get a smooth consistency batter. Let it rest for about 20 minutes.
Now that you have the batter, take the silicone molds and spray them with cooking oil or cake release. You need to make sure that they are well-greased. Once the molds are greased, add one scoop of the batter to each mold.
Preheat your air fryer to 330 degrees Fahrenheit for about 3 to 5 minutes. Next, place each silicone mold into the air fryer basket and cook them for 5 minutes at 350 degrees Fahrenheit or 180 degrees Celsius. You need the top to be slightly golden.
Once the top is cooked enough, flip the pancakes and cook them for another 4 minutes or until they are golden.
Repeat the step until you have used all the batter. Grease the molds each time to make sure the batter does not stick to them.
Transfer the pancakes to the serving place and top them off with fresh berries, powdered sugar, and maple syrup. Enjoy this breakfast treat with your family.
Notes
Use buttermilk, as it helps the pancakes become light and super fluffy. This is because buttermilk reacts with the baking soda and creates air bubbles to make the batter light. You can also use yogurt, lemon, and sour cream in the recipe for this fluffy texture.
If you have a medium-sized air fryer, please note that it can only handle four pancakes at a time. So, it is always better to cook them in batches. Do not stack the pancakes in or out of the air fryer; instead, spread them on the wire rack to avoid them getting soggy.
Always use a lighter hand when folding the dry ingredients. Do not overmix the batter, or it will make the mixture lumpy.
The second batch always takes less time, as the air fryer is already heated. Follow the color for a time estimate.
