- Air fryer liner
- Electric beater
- 8-inch deep cake plate
- Leveler
- Cake release
Ingredients
- 260 g Self-raising flour
- 250 g Caster sugar
- 3 Medium eggs
- 115 g Softened unsalted butter
- 120 ml Semi-skimmed milk
- 1 tsp Vanilla extract
Prepare the following ingredients for the frosting
- 57 g  Softened unsalted butter
- 240 g Icing sugar
- 2 tbsp  Double cream
- 3 tbsp Full-fat cream cheese
- 1 tsp Vanilla extract You can substitute it with vanilla paste
You need to prepare the following ingredients for filling and decoration
- Strawberry jam You can substitute it with raspberry jam. Both should be seedless
- Fresh berries or other seasonal fruits
- Mini meringues It is optional
- Icing sugar to dust on the cake
Instructions
- Start by preheating the air fryer at 160 degrees Celsius or 320 degrees Fahrenheit. In the meantime, prepare the batter.
- First, take an 8-inch deep cake pan and add baking paper at the bottom. It is better if your cake pan has a cake release.
- Measure the sugar and flour in one bowl and stir well to combine them.
- Once the dry ingredients are mixed together, add milk, butter, vanilla, and eggs into the bowl and beat them together with an electric hand mixer. You may also use a stand mixer.
- Now, take a spatula and scrap the bottom to mix the batter well. Take at least one minute to mix the batter or until it is smooth.
- Next, transfer the batter to the cake pan and place it in the air fryer. Bake it for at least 30 minutes at 320 degrees Fahrenheit or 160 degrees Celsius. Lower the temperature to 300 degrees Fahrenheit or 150 degrees Celsius and cook it for another 10 minutes.
- Check whether it is done. You can do this by inserting a toothpick in the center of the cake and if it comes out clean, the cake is done baking. If it comes out wet or the toothpick has moist crumbs with it, cook the cake for another 5 minutes.
- Once it is done baking, use the oven mittens and take the cake out of the air fryer. Cook it for 5 minutes in the pan and only after that, flip it onto the cooling rack.
- Now, take another bowl and transfer all the frosting ingredients in it. Beat everything together until the frosting is fluffy and light. You can check this by holding the peak the regular way.
- You can also slice the cake in half if the height is bigger for one layer of cake. Make a ring of the frosting around the edges of the bottom layer using a piping bag and fill it entirely. Add the next layer of the cake and top it off with another layer of frosting.
- Decorate the top-most cake layer with fresh berries. Dust it with icing sugar and serve it on the serving plate.
