The no-fuss, easy-to-make courgettes are a perfect choice for a mid-day meal or a side dish with grilled meat dishes. I have been making them forever, and each time, the recipe doesn’t fail to amaze me. Here is how you can make these quick and simple courgettes in an air fryer, so dive right in.

Ingredients
- 450 g Courgettes
- 2 tbsp Olive oil
- ¾ tsp Onion powder
- ¾ tsp Garlic powder
- Salt to taste
- 2 tsp Nutritional yeast
- ½ tsp Black pepper
Instructions
- First, preheat the air fryer to 200 degrees Celsius or 40 degrees Fahrenheit.
- In the meantime, trim the ends of your courgette and slice it into half (length-wise), followed by half-moon cuts.
- Toss the courgettes with pepper, salt, garlic powder, onion powder, olive oil, and nutritional yeast.
- Next, transfer the seasoned courgettes into the air fryer basket in a single layer. Do not overcrowd the fryer, or else you will be left with undercooked courgettes.
- Cook for five to seven minutes and flip them halfway through.
- Once the time is over, remove the courgettes from the air fryer and add seasoning. Serve them piping hot and enjoy this mid-meal snack.

Yes, of course; you can store leftover roasted courgettes in the fridge easily for up to 3 to 4 days. Can I Keep the Courgettes in the Freezer?
Well, no; courgettes are not the best for freezing. These vegetables have a high water content, which means you will be left with a lot of texture after freezing them for a longer period. Hence, it may not work well for salads or sandwiches, though they still go well with soups and stews.
Can I Make Air Fryer Courgettes Ahead of Time?
Yes, definitely. As I already discussed, this recipe of air-fried courgettes is perfect to store in the fridge in a sealed container, though it is best to serve fresh.
To make it ahead of time, you can marinate the courgettes one day before and air fry them whenever you need them ready. It won’t take you more than ten minutes at most.
Can I Increase the Quantities from this Recipe?
