If there is moisture on the skin of the meat, you can use a paper towel to soak it. Pat a paper towel on the upper skin and dry the piece of the pork. then make shallow cuts on the skin of the pork using a knife if you have a larger piece of the pork. It will help you make the pork piece crispy and ensure even cooking.
Rest the piece of pork on the cutting board and pinch salt on the skin. Rub salt well on the skin that has the mark of the cuts and make sure that the entire piece of the pork joint is well coated. Leave the coated piece of pork in the open air for 10 minutes and move forward to do other tasks of the procedure.
