2cupsall purpose flour (can substitute it with 450g self-raising flour)
4tbspbaking powder
1/4 fine-grind sea salt (can substitute it with kosher salt)
2tbspgranulated sugar (can substitute it with 50g of caster sugar)
1large egg (beaten)
1cupmilk
Instructions
Start by combining the flour, baking powder, sugar, and salt in a medium-sized bowl.
Grate cold butter in the same bowl and mix it well together using clean hands. Make sure the butter is properly mixed with the dry ingredients. Here, you will see the mixture getting the texture of coarse sand.
Now, make a hole in the center and add a lightly beaten egg to it. Gently beat the egg using the fork and combine the flour and butter mixture with the egg.
Gradually add the cream to the mixture and keep beating it with the fork until you see a dough forming.
Next, transfer the dough to a pastry mat or a working surface. Now, start gently folding the dough and press it together by gathering the loose end of the dough. You do not have to harden the dough for too long.
Once you are finished kneading the dough, press it into a big rectangle. Lightly flour the surface and use a rolling pin to flatten the dough. The desired thickness is around ½ inches.
Now, take the 2-2½ biscuit cutter and press it down to make scones from the dough. Do not twist the cutter, rather just press it down and lift it up. Keep repeating this until you have no area left on the dough; it will usually leave you with 4 to 5 scones.
Push together the leftover dough and form a 1-inch thick square and repeat the process to cut more scones. Continue doing this until you have utilized all the dough. At the end, you will get around 8 scones, each with 1 inch thickness.
Now that we are done with the dough, it's time to preheat the air fryer at 400 degrees Fahrenheit or 200 degrees Celsius for around 10 minutes.
Lightly brush the top of each scone with cream and make sure to not spill it over the edges, or it will hinder the scones from rising high.
Transfer the scones to the air fryer basket in a single layer and maintain a distance between the scones. Cook them for 8 to 10 minutes at 400 degrees Fahrenheit or until you see a golden brown top of the scone.
Please note that you may have to cook the scones in batches, depending on the size of your air fryer. Serve them with clotted cream or jam, and enjoy with friends or family.
